Rice Lentil Patties with Peach Cucumber Salad

Ingredients
- 200 g Puy lentils
- 1 onion
- 2 Garlic cloves
- 5 g ginger root
- 2 Spring Onions
- 5 tbsp Rapeseed Oil
- 200 g parboiled rice
- 2 carrots
- 1 handful herbs (5 g; e.g., parsley, thyme)
- 2 Eggs
- 3 tsp lemon juice
- 1 tsp curry powder
- 1 tsp ground cumin
- 4 tbsp whole grain breadcrumbs (15 g each)
- 1 peach
- 1 small cucumber (350 g)
- 0.5 bundle arugula (40 g)
- 100 g yogurt (3.5 % fat)
- 2 tbsp olive oil

Rinse lentils with water. Peel onion, garlic and ginger and finely dice everything. Trim spring onions, wash them, cut into thin rings, set aside half for the salad.

Heat 2 tbsp rapeseed oil in a pot. Add onion, garlic, ginger and spring onions and sauté over medium heat for 3 minutes. Add about 600 ml water, then lentils and simmer gently for about 20 minutes. Then add rice, lightly salt and simmer another 10 minutes.

Meanwhile peel carrots and dice them finely. Wash herbs, pat dry and chop finely. Add carrots to the pot and continue simmering for about 10 more minutes until lentils, rice and carrots are cooked. If necessary drain excess water, transfer mixture to a bowl and let cool for 10 minutes.

Stir in eggs and season the mixture with 1 tsp lemon juice, salt, pepper, curry powder and cumin. Mix well, incorporating enough breadcrumbs so that a moldable dough forms. Shape into 12 patties and fry one by one. Heat 1 tbsp rapeseed oil in a pan. Add 4 patties at a time and cook over medium heat for 3–4 minutes per side until golden brown. Keep warm in a preheated oven at 80 °C (convection 60 °C; gas: level 1).

For the salad, wash peach, halve it, remove pit and dice small. Peel cucumber, wash, cut lengthwise into halves and slice. Wash arugula and dry by spinning. Whisk yogurt with remaining lemon juice, salt and pepper until smooth. Mix salad ingredients with reserved spring onion rings in a bowl. Plate patties on a dish, arrange salad beside them and drizzle with dressing and olive oil.
