Ingredients
- 1 Garlic clove
- 1 onion
- 2 Zucchini
- 2 tbsp olive oil
- 350 ml vegetable broth
- 100 ml heavy cream
- Salt
- Pepper (freshly ground)
- 300 g plain yogurt
- 5 tbsp fresh cheese (pure)
- 2 tbsp freshly chopped parsley
- Lemon juice

Peel and finely dice the garlic and onion. Wash, trim, halve lengthwise, core, and slice zucchini into thin strips. In a pot heat oil and sauté onion with garlic until translucent. Add zucchini strips, cook briefly, then pour in broth.

Stir in cream, bring to a boil, season with salt and pepper, then remove from heat. Let the soup cool, then fold in yogurt, fresh cheese, and parsley; adjust seasoning with lemon juice and serve on plates.
