Ingredients

  • 3 shallots (finely chopped)
  • 3 tbsp clarified butter
  • 150 g buckwheat groats
  • 500 ml vegetable broth
  • 1 carrot (coarsely grated)
  • 1 bunch parsley
  • 50 g shredded Gouda cheese
  • 1 egg
  • Salt
  • Pepper (freshly ground)
  • 4 hamburger buns
  • 2 Tomatoes
  • 1 onion
  • lettuce leaves
  • 4 slices cheese
  • ketchup
  • mayonnaise

Instructions

    Sauté shallots in 1 tbsp clarified butter until translucent, add buckwheat groats and carrot, then deglaze with broth and simmer gently for about 10 minutes. Stir in the cheese, remove from pan and let cool.

    Mix in chopped parsley and egg, shape the mixture into four patties, and fry them in a pan with clarified butter until golden brown on both sides.

    Wash tomatoes and slice them.

    Peel onion and cut into rings.

    Wash lettuce leaves and pat dry.

    Split buns horizontally, spread mayonnaise on the bottom half, layer lettuce, place patties, top with tomato slices, onion rings, and cheese, add a drizzle of ketchup, then cover with the top bun.
