Ingredients

  • 800 g waxy potatoes
  • Salt
  • 1 head endive salad
  • 1 onion
  • 3 tbsp white wine vinegar
  • 4 Tbsp sunflower oil
  • 1 tsp Mustard
  • pepper (ground)
  • 100 g turkey bacon

Instructions

    Wash the potatoes and cook them in salted water for about 30 minutes.

    Clean, wash, dry, and tear the endive into bite-sized pieces. Peel and finely dice the onion. Whisk together vinegar, oil, mustard, salt, and pepper, then mix with the salad and onion. Dice the bacon and crisp it in a pan for 4–5 minutes.

    Drain the potatoes, peel them, let them steam dry, and mash roughly. Combine with the salad and bacon, season, add pepper, and serve.
