Ingredients

  • 200 g carrots
  • 1 large onion
  • 4 sprigs oregano
  • 200 g seitan
  • 2 Eggs
  • 2 tbsp breadcrumbs
  • 1 tsp paprika (sweet)
  • Salt
  • pepper (ground)
  • 5 Tbsp plant oil
  • 4 lettuce leaves (e.g., Lollo rosso)
  • 4 burger buns
  • 1 piece zucchini
  • 1 piece ginger (≈20g)
  • 2 onions
  • 1 tbsp peppercorns
  • 1 tbsp vinegar
  • 1 tsp sugar
  • a pinch curry powder
  • Salt

Instructions

    Wash, trim and grate the zucchini. Peel and finely chop the onions and ginger. Coarsely crush the peppercorns in a mortar. Heat oil in a hot pot and sauté onion and ginger cubes for 3-4 minutes. Add zucchini, vinegar, salt, curry and sugar; mix well and simmer gently uncovered for about 15 minutes until the liquid has almost completely evaporated. Transfer, cool, and refrigerate overnight.

    For the burger, peel and grate the carrots finely. Dice the onion. Shake off oregano leaves from the sprigs. Dice seitan as finely as possible. In a bowl combine seitan cubes with oregano, onion, carrots, eggs, breadcrumbs, paprika, salt and pepper; knead until the mixture is well formed. If needed add more breadcrumbs until it holds together. Shape into four patties and fry in hot oil for about 4 minutes per side.

    Meanwhile wash and dry the lettuce. Halve the buns, place lettuce on the bottom half, put patties on top, cover with 2-3 tbsp relish, and close with the top bun. Serve remaining relish on the side.
