Vegetable Burger with Buckwheat Kernels

Ingredients

  • 3 shallots (finely chopped)
  • 3 tbsp clarified butter
  • 150 g buckwheat groats
  • 500 ml vegetable broth
  • 1 carrot (coarsely grated)
  • 1 bunch parsley
  • 50 g shredded Gouda cheese
  • 1 egg
  • Salt
  • Pepper (freshly ground)
  • 4 sesame hamburger buns
  • 2 Tomatoes
  • 1 onion
  • lettuce leaves
  • ketchup
  • mayonnaise

Instructions

    Sauté shallots in 1 tbsp clarified butter until translucent, add buckwheat groats and carrot, then deglaze with broth and simmer for about 10 minutes over very low heat. Stir in cheese, remove from pan and let cool.

    Stir in chopped parsley and egg, shape the mixture into four patties, and fry them in a pan with clarified butter until golden brown on both sides.

    Wash tomatoes and slice them thinly.

    Peel onion and cut into rings.

    Wash lettuce leaves and pat dry.

    Slice buns horizontally, spread mayonnaise on the bottom half, layer lettuce, place patties, top with tomato slices and onion rings, add a drizzle of ketchup, then cover with the top bun. Serve the buckwheat vegetable burger.
