Ingredients

  • 1 can chickpeas (about 400 g)
  • 1 handful spinach
  • 0.5 onion
  • 1 Garlic clove
  • 2 tbsp plant oil
  • 3 tbsp breadcrumbs
  • 1 tbsp finely chopped parsley
  • a pinch ground cumin
  • a pinch ground coriander
  • Salt
  • black pepper (freshly ground)
  • 4 lettuce leaves
  • 4 buns
  • 1 tsp grenadine
  • 80 g Italian truffle cheese (Dolcelatte)

Instructions

    Rinse the chickpeas and drain them. Wash the spinach, shake dry, and roughly chop it. Peel and finely chop the onion and garlic. Sauté both in 1 tsp oil until translucent. Add the spinach and wilt slightly, then remove from heat.

    Puree the chickpeas finely and mix with the spinach mixture and breadcrumbs. Fold in parsley and season with cumin, coriander, salt, and pepper. Shape the mixture into four patties. If the mixture is not firm enough, add a little more breadcrumb. Then fry each side in the remaining oil for about 8 minutes until golden brown.

    Wash the lettuce, shake dry, and tear into smaller pieces if desired. Slice the buns and drizzle the cut sides with a bit of pomegranate syrup. Assemble by layering lettuce, patties, and one slice of cheese on each bun, place the top halves back on, and secure with toothpicks as desired.
