Vegetable Stir-Fry with Turkey

Ingredients
- 700 g broccoli
- 5 carrots
- 2 small red chilies
- 5 thick garlic cloves
- 200 g turkey meat
- Salt
- pepper (ground)
- 3 tbsp light soy sauce
- 1 tbsp oyster sauce
- 6 tbsp vegetable oil

Cut the turkey into bite-sized cubes. Season with salt and pepper, drizzle with 1 tbsp soy sauce, mix well and let sit briefly. Wash the broccoli, separate florets and leaves from stems. Trim hard ends of stems. Peel the stem if very tough and cut into sticks.

Wash, peel, quarter carrots lengthwise and cut into long sticks. Peel garlic and slice thinly. Rinse chilies and cut into rings. Bring salted water to a boil. Blanch broccoli stems, stalks, and carrot sticks for 8 minutes. Remove and drain.

Then blanch broccoli florets and leaves for 5 minutes and drain well. In a large pan heat oil, add the turkey and sear over high heat until browned all around. Remove and set aside. Add garlic to hot oil and fry until golden brown. Remove and set aside.

Add vegetables and chilies to remaining oil (add more if needed) and stir-fry over high heat for 3 minutes. Take pan off heat, season with salt, pepper, remaining soy sauce, and oyster sauce. Return turkey and mix with veggies. Serve in a bowl and sprinkle with roasted garlic.
