Ingredients

  • 1.5 l beef broth
  • 2 carrots
  • 2 Potatoes
  • 2 kohlrabi
  • 1 stale roll
  • 1 Shallot
  • 1 tbsp butter
  • 400 g ground meat
  • 2 tbsp breadcrumbs
  • 2 tbsp parsley (finely chopped)
  • 1 egg
  • Salt
  • Pepper
  • nutmeg
  • kohlrabi greens (for garnish)

Instructions

    Clean, peel, wash the vegetables, cut into bite-sized pieces and simmer in beef broth for about 10 minutes.

    Soak the roll in water.

    Peel and finely chop the shallot; sauté it in hot butter until translucent.

    Combine ground meat with the well-squeezed roll, breadcrumbs, parsley, salt, pepper, nutmeg, shallot, and egg. Mix thoroughly to form a dough. With damp hands shape small meatballs and drop them into the soup; cover and simmer for another 8-10 minutes without boiling further. Season with salt, pepper, and nutmeg.
