Fränkische Potato Soup

Ingredients
- 500 g Potatoes
- 150 g knollensellerie (couch grass)
- 150 g kohlrabi
- 1 onion
- 20 g butter
- 900 ml vegetable broth
- 150 ml whipping cream
- Salt
- black pepper (freshly ground)
- Nutmeg (freshly grated)
- 2 tbsp sunflower oil
- 1 tbsp thyme leaves (for garnish)

Peel, wash and cube the potatoes, knollensellerie, and kohlrabi. Dice the onion finely. Melt the butter in a pot and sauté the vegetables except the onion for 3-4 minutes. Add the broth and simmer for about 20 minutes over medium heat.

Puree with an immersion blender, strain through a sieve, then bring to a boil again. Stir in the cream and season with salt, pepper, and nutmeg. In a hot pan, sauté the onions in oil until golden yellow. Ladle the soup into four preheated bowls and garnish with the fried onions and thyme.
