Rice Soup with Meatballs

Ingredients
- 100 g basmati rice
- 5 cloves garlic
- 4 tbsp germination oil
- 2 Spring Onions
- 150 g ground pork
- 2 tbsp Soy sauce
- Salt
- Pepper (freshly ground)
- 1.5 l Chicken broth
- 1 tbsp fish sauce
- 2 tbsp freshly chopped coriander

Wash the rice in a sieve under running water, then bring to a boil with slightly salted water at about twice the volume and simmer covered over low heat for about 20 minutes; set aside.

Peel, chop, and sauté the garlic in hot oil, remove from heat and let cool with the garlic in the oil. Strain the oil through a fine sieve. Trim the spring onions and slice into thin rings. In a bowl combine the ground pork with soy sauce, salt, and pepper. Shape small balls about 2 cm in diameter from the mixture.

Season the chicken broth with a little pepper and fish sauce and let it simmer gently; add the meatballs and cook for 1 minute. Add the rice and simmer for another 5 minutes. Stir in the spring onions and bring to a boil briefly. Divide the soup into bowls, drizzle with garlic oil, and sprinkle with coriander before serving.
