Ingredients

  • 1 vegetable onion
  • 0.5 lettuce head
  • 2 Potatoes
  • 3 Carrots
  • 3 tomatoes
  • 5 leaves Swiss chard
  • 2 Celery stalks
  • 200 g peas
  • 5 tbsp olive oil
  • 2 l vegetable broth (from the jar)
  • 1 bunch parsley
  • 2 Garlic cloves
  • 6 slices white bread
  • 100 g grated Parmesan

Instructions

    Peel the onion and cut into thin rings. Wash the lettuce and slice into strips. Peel the potatoes and dice them. Wash the Swiss chard, trim the stems slightly and cut into strips. Wash the celery and cut into thick rings. Wash the carrots and slice them. Boil the tomatoes briefly, cool in ice water, peel, quarter.

    Wash the parsley and finely chop it. Heat the olive oil, sauté the onions and add the vegetables. Sauté for 5 minutes, pour in the vegetable broth and simmer covered over low heat for 1 hour. Peel the garlic cloves, halve them, rub the bread slices with the garlic and grill in the oven at 200°C for 5 minutes. Serve the soup on plates and garnish with a bread slice.
