Hungarian Soup with Sausage, Mushrooms and Sour Cream

Ingredients

  • 150 g smoked ham
  • 1 onion
  • butter for frying
  • 250 g forest mushrooms
  • Salt
  • ground pepper
  • sage leaf
  • thyme
  • paprika powder
  • 1.2 l meat broth
  • 2 Bay leaves
  • 100 g smoked paprika sausage
  • 200 ml sour cream
  • 50 g flour
  • 200 g pre-made dumplings with meat filling

Instructions

    Dice the smoked ham and onion.

  2. 2.

    Heat some butter and brown the ham cubes, then remove them from the fat. Brown the onion in the remaining fat.

    Meanwhile clean the forest mushrooms, cut into small pieces if desired, and add them. Season the mixture heavily with salt, pepper and herbs.

    Sauté everything for a few minutes. While that’s cooking, slice the paprika sausage.

    Sprinkle the mushrooms with paprika powder and pour in the meat broth. Add bay leaves, paprika sausage and ham cubes and bring to a boil.

    Whisk the sour cream with flour.

    Add the dumplings and heat through. Once cooked, thicken the soup with the flour-sour cream mixture. Bring to a final boil and serve.
