A simple minestrone with beans and soup vegetables delights young and old. The vegetables can be swapped at will. Give it a try!
Ingredients
- 250 g sliced beans
- 1 bundle of soup vegetables
- 2 onions
- 2 Garlic cloves
- 2 tsp Olive oil
- Salt
- ground pepper
- 1 l meat broth
- 150 g canned white beans
- 50 g pasta (e.g., spaghetti noodles)
- 2 Tomatoes
- Basil
- 2 Tbsp grated Parmesan
Instructions

Wash, trim and chop the beans and soup vegetables.

Peel and finely dice the onions and garlic, then sauté them in hot oil in a pot until translucent. Add the beans and soup vegetables and cook briefly. Pour in the broth, season with salt and pepper, bring to a boil and simmer for about 20 minutes.

Five minutes before the end of cooking add the pasta and drained white beans to the soup. Dice the tomatoes, stir them in and adjust seasoning again.

Serve by ladling the minestrone into bowls, topping with finely chopped basil and sprinkling grated Parmesan on top.
