Vegetable Sausage

Ingredients

  • 1 handful mixed herbs (e.g., chives, parsley, dill)
  • 400 g starchy cooking potatoes (cooked the day before)
  • 150 g Emmental cheese
  • 150 g breadcrumbs
  • 1 egg
  • 100 g zucchini
  • 100 g fennel
  • 1 tbsp butter
  • Salt
  • pepper (ground)
  • nutmeg
  • 1 tbsp Vegetable oil

Instructions

    Rinse the herbs, shake dry and finely chop. Peel the potatoes and grate them through a meat grinder attachment. Grate the cheese as well. Add the breadcrumbs, egg and herbs. Wash, peel and finely grate the zucchini and fennel (best in a food processor). Sauté in hot butter in a pan for 3-4 minutes. Remove from heat and let cool. Add to the potato mixture and combine well. Season with salt, pepper and nutmeg and add more breadcrumbs if needed until the mixture is firm enough to shape.

    Fill the mixture into edible casings using the sausage attachment. Twist the sausages into desired shapes or tie them with kitchen twine.

    Brown the finished sausages in a lightly oiled grill pan on both sides until golden brown.
