Vegetable Sauce

Creamy, spicy and individually customizable: The vegetable sauce from Spoonsparrow pairs wonderfully with potatoes, pasta or meat.

Ingredients

  • 1 stalk leek
  • 2 stalks celery
  • 2 carrots
  • 1 parsley root
  • 1 onion
  • 1 Garlic clove
  • 4 tbsp oil
  • Salt
  • pepper (ground)
  • 150 ml Vegetable broth
  • 150 ml Heavy Cream
  • a sprig rosemary and thyme each
  • 1 bay leaf
  • 1 bunch parsley (finely chopped)

Instructions

  1. 1.

    Clean the vegetables, peel if desired, and cut into small cubes.

  2. 2.

    Sauté the vegetables in hot oil, add herbs and bay leaf, pour in broth, cover and simmer. Add cream and continue to simmer uncovered for 10 minutes.

    Stir in parsley before serving.
