Ingredients
- 4 handfuls parsley
- 2 sprigs thyme
- 1 onion
- 2 cloves garlic
- 1 small red bell pepper
- 1 red chili pepper
- 1 tsp coarse sea salt
- 2 dried bay leaves
- 1 tsp paprika (sweet)
- 1 tsp Dried oregano
- 150 ml olive oil
- 70 ml vinegar

Rinse the parsley and thyme, shake dry, pluck the leaves and roughly chop. Peel and dice the onion and garlic. Wash the bell pepper and chili, halve them, remove seeds and stems, and dice both finely. Crush the salt with broken bay leaves in a mortar until fine. Mix in the paprika and oregano.

Combine the parsley, thyme, onion, garlic, bell pepper, and chili with the spice mix in a large bowl and stir well. Cover and let rest for about 1 hour.

Then whisk the oil with vinegar and about 100 ml water and thoroughly combine with the herb mixture.
