- 250 g goose fat (flamed)
- 1 apple
- 1 onion
- 1 tbsp thyme
- Salt
- Pepper (freshly ground)

Dice the goose fat into small cubes. Peel the apple and onion; quarter the apple, remove the core, cut into wedges, and finely dice the onion. Sauté with the fat and thyme in a pot over low heat, stirring occasionally. Simmer gently for about 20 minutes until the gribenes turn golden brown.

Season with salt and pepper. Spoon the mixture into prepared jars and allow to set at a cool place. Do not move the jars once filled, as this would make the fat brittle.
