Spicy Beef

Ingredients
- 200 g beef fillet
- 4 tbsp soy sauce
- 1 Egg white
- 1 tsp Cornstarch
- 250 g Broccoli
- Salt
- 2 carrots
- 1 red bell pepper
- 1 walnut-sized piece ginger
- 1-2 cloves garlic
- 120 g soy sprouts
- 1 unprocessed orange
- 4-5 tbsp oyster sauce
- 100 ml chicken stock (from the jar)
- 2-3 tbsp rice wine (or dry sherry)
- 1-2 dried chili peppers
- 3 tbsp soy oil

Slice beef fillet into thin strips. Whisk soy sauce with egg white and cornstarch. Mix in beef strips and let marinate covered for 30 minutes.

Clean broccoli, rinse, and cut into small florets. Blanch in salted water for 2-3 minutes, drain, shock in cold water, and set aside. Peel carrots. Quarter bell pepper, clean, and rinse. Peel ginger and garlic. Slice carrots, bell pepper, and ginger into thin strips. Slice garlic. Rinse soy sprouts.

Rinse orange hot, pat dry, and grate the zest. Squeeze juice. Mix orange juice with oyster sauce, chicken stock, and rice wine.

Heat 1 tbsp oil in a deep pan. Stir-fry vegetables, ginger, and garlic. Add rice wine mixture, orange zest, and chili peppers; cover and steam for about 10 minutes.

In another non-stick pan heat remaining oil and fry beef strips, turning, for 3-4 minutes. Combine meat and soy sprouts with the vegetables, let simmer on low heat for 2-3 minutes, season with salt.
