Vegetable Pasta Salad

Ingredients

  • 350 g spiral pasta (egg noodles)
  • 1 bunch carrots
  • 200 g broccoli
  • 1 bunch spring onions
  • 150 g cocktail tomatoes
  • 1 head lettuce
  • 3 tbsp white wine vinegar
  • 6 tbsp oil
  • 1 tsp Mustard
  • Salt
  • Pepper

Instructions

    Cook the pasta according to package instructions, drain, rinse with cold water, let it dry well and mix with 1 tbsp olive oil.

    Peel, wash and slice the carrots. Wash the broccoli, cut into florets and blanch the carrots in boiling salted water for about 8 minutes, broccoli for about 5 minutes. Remove, shock in cold water and drain well. Quarter the tomatoes. Trim the spring onions, cut off ends and slice into thin rings. Combine all ingredients with the pasta.

    Separate the lettuce leaves, wash and dry. Lay a large bowl with the lettuce leaves. Whisk vinegar, oil, mustard, salt and pepper to make a dressing, drizzle over the salad and mix. Arrange the pasta salad on top of the lettuce leaves.
