Ingredients

  • 400 g spiral pasta
  • 200 g frozen peas
  • 2 large sweet potatoes
  • 2 small red chili peppers
  • olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt
  • pepper from grinder

Instructions

    Blanch the frozen peas in boiling salted water for about 3 minutes, then drain. Peel and cube the sweet potatoes. Heat 2 tbsp olive oil in a pan and fry the potato cubes until golden on all sides; season with salt and pepper when cooked. Wash the chili peppers, cut off the stem, deseed with a sharp knife, and slice into thin rings.

    Cook the pasta in plenty of salted water until al dente, then drain. In a large bowl combine the potatoes, peas, 4 tbsp olive oil, and chili rings. Let cool slightly, then stir in lemon juice. Serve warm on individual plates or bowls.
