Vegetable Pasta Bake

Ingredients

  • 300 g broccoli florets
  • 300 g macaroni
  • Salt
  • 3 eggs
  • 100 g sour cream (or milk)
  • 200 ml tomato juice
  • black pepper (ground)
  • 100 g cooked ham
  • 100 g canned corn kernels
  • 150 g mozzarella

Instructions

    Break the pasta in half and cook it twice in plenty of boiling salted water until al dente, adding broccoli in the last 4 minutes.

    Whisk eggs with sour cream and tomato juice, season with salt and pepper. Dice the ham small.

    Drain the pasta and broccoli, let them dry, then mix with corn and ham in a greased baking dish. Spread the sauce evenly over it. Slice mozzarella thinly and lay on top of the bake. Bake in a preheated oven at 180°C (fan) for about 30 minutes until golden brown.
