Ingredients
- 1 red, 1 green, and 1 yellow bell pepper
- 1 clove garlic
- 2 tbsp olive oil
- Salt
- freshly ground pepper
- 1 tsp oregano leaf
- 1 tomato
- 1 tbsp butter
- frozen soup vegetable mix
- 4 servings mashed potato powder (from the package + milk)
- 30 g freshly grated Parmesan

Quarter the bell peppers, clean, rinse and cut into pieces. Peel the garlic and slice it thinly. Heat olive oil in a pan, sauté garlic and pepper for 3-4 minutes. Stir in oregano and season with salt and pepper.

Rinse the tomato, finely dice it while removing seeds. Melt butter. Sauté tomato and soup vegetables. Add liquid as directed on the package and prepare the mashed potato powder as described. Mix in Parmesan. Plate everything together.
