- 4 pork chops
- Salt
- pepper (ground)
- 2 tbsp plant oil
- 1 Shallot
- 100 ml dry white wine
- 200 ml meat broth
- 100 ml heavy cream
- 1 tbsp green peppercorns (jarred)
- green onion strips

Preheat the oven to 120°C (250°F) with fan and top heat.

Rinse the chops, pat dry, and season with salt and pepper. In a hot pan, brown both sides in oil for 1-2 minutes. Remove from pan and place on a rack over a fat pan in the oven for about 20 minutes to finish cooking.

Meanwhile, peel and finely dice the shallot. Sauté in the pan drippings until golden brown. Deglaze with wine and add broth. Simmer for about 5 minutes, then stir in cream and strain the sauce through a sieve. Reheat gently, let thicken slightly, add green peppercorns, and season with salt and pepper.
