Vegetable Millet
Vegetable millet with zucchini and carrots as a side dish rich in fiber, iron, and silica. Vegetarians can meet their iron needs with millet.
Ingredients
- 175 g zucchini (1 zucchini)
- 125 g carrots (2 carrots)
- 1 Red Onion
- 1 Garlic clove
- 2 tbsp olive oil
- 100 g Millet
- 200 ml classic vegetable broth
- 2 stems basil
- Salt
- Pepper
Instructions

Wash and dry the zucchini, then peel it. Peel and clean the carrots. Cut the zucchini and carrots into 5 mm cubes.

Peel and finely dice the onion and garlic.

Heat the oil in a pot. Sauté the onion, garlic, zucchini, and carrots over medium heat until they turn light brown.

Add the millet and sauté briefly.

Pour in the vegetable broth and bring to a boil. Cover and simmer on low heat for 5 minutes, stirring occasionally. Remove from heat and let it stand covered for 10 minutes.

Wash the basil, shake off excess water, pluck the leaves, and finely chop them.

Stir the chopped basil into the millet at the end of the resting time and season everything with salt and pepper.
