Vegetable Linguine

The vegetable noodles of Spoonsparrow bring Mediterranean flair to the home kitchen!

Ingredients

  • 500 g linguine
  • Paprika peppers (each 1/2 red, green and yellow)
  • 150 g fresh peas
  • 150 g pickled olives
  • olive oil
  • Salt
  • pepper (from grinder)
  • 100 g coarsely grated Caciocavallo

Instructions

    Slice the paprika peppers lengthwise into very thin strips. Peel the peas, strip them, and blanch for 6 minutes in boiling salted water; drain.

    Cook the linguine in plenty of salted water until al dente; drain. Mix with 5 tbsp good olive oil, season with salt and generous pepper, and spread on a plate. Top with pickled olives, peas and paprika strips, then sprinkle the vegetable noodles with Caciocavallo and serve.
