Ingredients
- 1 small red bell pepper
- 1 small yellow bell pepper
- 2 small zucchini
- 1 baguette
- 200 g Cream cheese
- 3 tbsp mayonnaise
- 2 tbsp finely chopped parsley
- Salt
- ground black pepper

Wash, trim, halve, seed and peel the peppers; cut into small cubes. Wash the zucchini and blanch in boiling salted water for 4 minutes; drain, shock in ice water, dry, and trim ends.

Cut the baguette lengthwise without slicing all the way through.

Scoop out the bread dough and blend with cream cheese and mayonnaise; add pepper and parsley, season with salt and pepper, and mix well.

Fill half of the baguette with the mixture, lay sliced zucchini on top, spread remaining mixture over it, then fold together. Wrap tightly in foil and refrigerate for about 3 hours before slicing to serve.
