Vegetable Cheese Skewers
Delicious vegetable cheese skewers from Spoonsparrow: The bell pepper is full of vitamin C, which boosts the immune system!
Ingredients
- 2 Garlic cloves
- 2 sprigs Mint
- 4 tbsp olive oil
- Salt
- Pepper
- 2 zucchinis
- 1 red bell pepper
- 1 yellow bell pepper
- 100 g dates tomato
- 200 g halloumi
Instructions

Soak wooden skewers in water. Peel and finely chop the garlic. Wash the mint, shake dry, pluck leaves and finely chop. Mix mint with olive oil, salt, pepper and garlic to make a marinade.

Clean, wash and slice zucchinis lengthwise into thin strips using a vegetable peeler. Wash bell peppers, halve, deseed and cut into bite‑size cubes. Clean and wash the dates tomatoes. Drain the halloumi and cut into cubes.

Lay zucchini flat in a bowl, add remaining vegetables and cheese, then pour marinade over everything. Refrigerate for at least 1 hour to marinate.

Thread the marinated vegetables and cheese alternately onto skewers. Fold zucchini into small packets. Cook skewers in a hot pan, turning and basting with leftover marinade until golden brown on all sides, or grill in a heated grill pan for 5–8 minutes.
