Ingredients

  • 2 paprika peppers (red and yellow)
  • 1 small eggplant
  • 2 onions
  • 1 Garlic clove
  • 40 g sun-dried tomatoes (pickled in oil)
  • 3 tbsp olive oil
  • 1 tsp harissa
  • 1 tsp Honey
  • 1 tsp Dried oregano
  • 1 tsp Sweet paprika powder
  • 1 tsp freshly chopped rosemary
  • a pinch ground coriander
  • 1 tsp lemon juice
  • Salt
  • black pepper (freshly ground)
  • 500 g halloumi cheese
  • 4 multigrain buns

Instructions

    Preheat the oven to 200°C with top and bottom heat.

    Wash the peppers, halve them, remove seeds and membranes, and slice into strips. Peel, wash, and cut the eggplant into ~1 cm thick slices. Peel the onions and garlic. Slice the onions into wide strips and finely chop the garlic. Drain the tomatoes and reserve the oil.

    In a large bowl whisk together olive oil, harissa, honey, oregano, paprika powder, rosemary, coriander, lemon juice, salt, and pepper.

    Toss the vegetables well with the marinade and spread them on a parchment-lined baking sheet. Bake in the preheated oven for 15–20 minutes, turning occasionally.

    Slice the halloumi into thick slices. Lightly oil a non-stick skillet with some of the tomato oil and cook the halloumi until each side is golden brown and crisp, about 3 minutes per side.

    Split the buns and layer them with halloumi and grilled vegetables. Secure with toothpicks and serve immediately or pack for on-the-go.
