Creamy Spinach Pasta with Raisins

- 500 g fresh leafy spinach
- Salt
- 60 g raisins
- 1 Garlic clove
- 400 g short macaroni
- 40 g pine nuts

- 50 ml dry white wine
- 100 ml Vegetable broth
- 3 tbsp whipping cream
- 7 tbsp ricotta
- pepper (ground)
- Nutmeg (freshly grated)

Wash, rinse, and clean the spinach, then collapse it in boiling salted water. Drain, shock with cold water, squeeze out excess moisture, and chop.

Soak the raisins in lukewarm water. Peel and finely chop the garlic.

Cook the pasta in boiling salted water until al dente.

In a hot pan without oil, toast the pine nuts to golden yellow, remove and set aside. Heat 2 tbsp oil in the same pan and sauté the garlic until translucent. Add the spinach and raisins, deglaze with wine, pour in broth and cream, then stir in 3 tbsp ricotta. Season with salt and pepper, simmer on medium heat for 5-6 minutes, and finish with nutmeg.

Drain the pasta, let it dry slightly, add to the sauce, mix gently, plate, and garnish with remaining pine nuts and ricotta.
