Ingredients

  • 250 g fresh young spinach
  • 500 g chestnut mushrooms
  • 1 Garlic clove
  • 150 g peeled whole hazelnuts
  • 2 red onions
  • 2 tbsp white balsamic vinegar
  • 6 tbsp Olive oil
  • 1 tbsp red peppercorns
  • Salt
  • 75 g freshly grated parmesan

Instructions

    Rinse, wash, dry and spin the spinach. Clean the mushrooms and cut into bite‑size pieces. Peel the garlic. Roughly chop the nuts, toast them in a pan without fat, remove and set aside. Peel the onions and slice into strips.

    For the dressing whisk vinegar with 4 tbsp olive oil and season with salt and pepper. Heat remaining olive oil in the nut pan and quickly sauté the mushrooms. Add crushed garlic, stir in onion strips, cook together, season with peppercorns and salt, then remove from heat. Arrange spinach on plates, top with mushrooms and nuts, drizzle dressing, and sprinkle freshly grated parmesan before serving.
