Vegan Wild Garlic Soup

Ingredients
- 150 g wild garlic
- 1 Shallot
- 1 tbsp Olive Oil
- 600 ml Vegetable Broth
- 200 ml coconut cream
- Salt
- ground pepper
- 5 g wild garlic flower (for garnish)
Instructions

Wash the wild garlic, shake off excess water and cut into fine strips. Peel the shallot, dice finely and sauté in a pot with hot oil over medium heat until translucent.

Add the wild garlic (reserve 2 tbsp for garnish), pour in the broth and simmer for 5 minutes. Puree with an immersion blender, stir in the coconut cream, bring to a boil again and season with salt and pepper.

Serve the vegan wild garlic soup in small bowls, sprinkle with the remaining garlic strips and flowers, and enjoy.
