The Simple Wild Garlic Soup from Spoonsparrow is the quintessential springtime dish and works wonderfully as a light starter.
Ingredients
- 200 g wild garlic
- 500 ml meat broth
- 300 ml heavy cream
- 2 tbsp extra‑virgin olive oil
- Salt
- black pepper (freshly ground)
- nutmeg
- 1 pinch cayenne pepper

Wash the wild garlic and slice into strips. Heat the oil in a pot, add the garlic and sauté until it wilts.

Pour in the broth, bring to a boil, then stir in the cream and blend everything finely. Season with salt, pepper, cayenne pepper, and nutmeg; taste and adjust as needed. Serve in soup bowls with fresh white bread on the side.
