Vegan Waffles

Vegan waffles from Adaeze Wolf bring spring to the table thanks to strawberry compote as a side – this recipe is available here at Spoonsparrow!

Ingredients

  • 1 ripe banana
  • 50 ml oat drink (oat milk)
  • 50 ml oat cream
  • 100 g spelt whole‑grain flour
  • 1 tbsp cinnamon
  • 1 tsp Baking powder
  • 1–2 tsp raw cocoa powder
  • 50 ml mineral water
  • 300 g fresh strawberries
  • ½ lemon
  • a little oil (for the waffle iron)

Instructions

    Mash the banana with a fork. Add oat drink and oat cream, then blend.

  2. 2.

    Mix the dry ingredients together and add to the banana‑oat mixture. Add mineral water and stir until a smooth batter forms.

    Wash, clean, and quarter the strawberries. Place them in a pot, add lemon juice, and gently simmer with a pinch of cinnamon to make compote.

    Preheat the waffle iron and lightly oil it.

    Cook each vegan waffle one at a time. Finish by topping with strawberry compote.
