Vegan Rice Pudding with Fruits

Ingredients

  • 250 g sticky rice
  • 300 ml coconut milk
  • 80 g palm sugar
  • 1 tbsp lime juice
  • 1 Mango
  • 1 tbsp toasted sesame seeds
  • 200 g mango flesh
  • 200 g pineapple flesh
  • 20 ml coconut liqueur
  • 1 tsp vanilla essence

Instructions

    Rinse the rice in a sieve and place it in a bowl. Cover with water and let soak overnight. Rinse again, drain well, and fill a bamboo steamer basket lined with cloth. Steam covered over hot steam for 20 minutes.

    Heat the coconut milk with sugar and lime juice while stirring until the sugar dissolves. Remove from heat, mix in the steamed rice, and let it cook gently for 10-15 minutes.

    Dice the mango and pineapple into small cubes. Mix them with the liqueur and vanilla.

    Arrange half of the rice on plates using a dessert ring, cover with fruit, then spread the remaining rice on top and finish with the rest of the fruits. Remove the ring and serve.
