Vegan Potato Herb Timbale

Ingredients

  • 300 g waxy potatoes
  • 2 handfuls young nettle leaves
  • 40 g sun-dried tomatoes (in oil)
  • 2 stems Parsley
  • 2 stems thyme
  • 1 clove garlic
  • 1 Shallot
  • 100 g soy quark
  • 2 tbsp olive oil
  • 2 tbsp Soy flour
  • 1 tsp Baking powder
  • Salt
  • Pepper (freshly ground)
  • nutmeg

Instructions

    Wash the potatoes and steam them for about 30 minutes.

    Preheat the oven to 180°C with both fan and top heating.

    Rinse the nettles, shake dry, pluck and roughly chop. Drain the tomatoes and slice into strips. Rinse parsley and thyme, shake dry, pluck and finely chop. Peel garlic and shallot, finely chop both and place in a bowl. Press the peeled potatoes through a masher and add to the bowl. Let them steam off. Mix soy quark with oil, soy flour and baking powder. Fold in nettles, tomatoes and herbs, seasoning with salt, pepper and nutmeg. Divide the mixture into four timbale molds and bake for about 20 minutes. Remove from the molds and serve with cucumber salad if desired.
