Vegan Porridge

This vegan porridge lures you in the morning with delicious mango and crunchy coconut chips straight from bed.

Ingredients

  • 600 ml Coconut Milk
  • 200 g tender rolled oats
  • 4 tsp maple syrup
  • 400 g mango (1 mango)
  • 60 g coconut chips (6 heaping tbsp)
  • 4 sprigs mint (for garnish)

Instructions

    Heat the coconut milk in a pot. Stir in the oats and maple syrup and simmer for 2–3 minutes over medium heat. Then let it thicken on low heat for about 5 minutes.

    Meanwhile, peel, halve, and pit the mango. Dice the flesh. Toast the coconut chips in a small pan without oil over medium heat for 2 minutes. Wash the mint, shake dry, and pluck the leaves.

    Fill glasses or bowls with the vegan porridge and garnish with mango cubes, coconut chips, and mint.
