Vegan Peanut Cookies

Vegan peanut cookies from Spoonsparrow: These tasty cookies are easy to make and taste great all year round!
Ingredients
- 2 tsp ground flaxseed
- 250 g flour (+1 tbsp for working)
- 100 g raw cane sugar
- 1 tsp Baking powder
- 0.5 tsp vanilla powder
- 0.25 tsp cinnamon
- a pinch of salt
- 100 g peanut butter (smooth)
- 100 g vegan margarine
- 100 g roasted unsalted peanuts

Grind flaxseed in a food processor and soak in 2 tbsp water. In a bowl mix flour, sugar, baking powder, vanilla, cinnamon, and salt. Add the soaked flaxseed, peanut butter, and margarine; knead into a smooth dough. Cover and chill for 30 minutes.

Line a baking sheet with parchment paper. Shape the dough into a log, cut into about 1 cm thick slices, and place on the sheet. Sprinkle a few peanuts on each cookie and press lightly.

Bake the vegan peanut cookies in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for 13–15 minutes.
