Vegan Cinnamon Stars
These vegan cinnamon stars are at least as good as the original! Try the recipe from Spoonsparrow.
Ingredients
- 1 tsp lemon juice
- 225 g powdered sugar made from whole cane sugar
- 400 g ground almonds (add a little more if needed)
- 2 tsp Cinnamon

Knead the almonds with cinnamon, 150g powdered sugar, 1 tbsp lemon juice, and 3-4 tbsp water into a sticky dough.

The dough should be pliable but not too firm; cover it and refrigerate for about an hour.

Line baking trays with parchment paper. Roll the dough to 1 cm thickness, cut out star shapes, and place them side by side on the tray. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2‑3) for about 8–10 minutes. The stars should remain slightly soft inside and stay as white as possible. Cool on a wire rack.

Whisk the remaining powdered sugar with 1–2 tbsp water to make a thick glaze. Brush the stars evenly with the glaze, let them dry, and enjoy.
