Delicate Cinnamon Stars

Ingredients

  • 4 egg whites
  • 0.5 small lemon
  • 300 g powdered sugar from raw cane sugar
  • 2 tsp Cinnamon
  • 500 g ground hazelnuts (+10 g for the work surface)
  • 1 tbsp flour

Instructions

    Separate the eggs (use the yolks elsewhere). Wash the lemon hot, pat dry, grate the zest, and squeeze out the juice. Beat the egg whites with ½ tsp lemon juice and grated zest until stiff peaks form. Gradually fold in sifted powdered sugar until the mixture is smooth and glossy. Set aside about 4 tbsp for glazing.

    Carefully mix the remaining foam with cinnamon and nuts.

    Dust the work surface with ground nuts and lightly flour it. Roll out portions of dough to about 0.75 cm thickness, keep the rest of the dough chilled. Cut star shapes and place them on two parchment-lined baking sheets. Brush all stars evenly with the glaze and bake in a preheated oven at 150 °C (fan 130 °C; gas: level 1–2) for about 30 minutes, baking slowly. The glaze should stay white while the stars dry on the outside and remain juicy inside.
