Ingredients

  • 400 g Carrots
  • 200 g Kohlrabi
  • 400 g Potatoes
  • 2 stalks celery
  • 8 shallots
  • 2 tbsp plant oil
  • 800 ml vegetable broth
  • 1 bay leaf
  • 2 peppercorns
  • 2 piment berries
  • 1 tsp freshly chopped lovage
  • 2 tbsp freshly chopped parsley
  • Salt
  • ground pepper

Instructions

    Peel the carrots, kohlrabi, potatoes and shallots; cut all but the shallots into bite‑size pieces.

    Wash, trim and slice the celery into rounds.

    Heat the oil in a pot and briefly sauté the vegetables. Add the broth, spices, lovage and parsley, season with salt and pepper, and simmer over medium heat for about 15 minutes. Taste and adjust seasoning again before serving in deep bowls.
