A completely plant‑based dish: vegan paprika soup from Spoonsparrow

Ingredients

  • 750 g large red bell peppers (3 large red bell peppers)
  • 1 onion
  • 1 tbsp Olive Oil
  • 1 Garlic clove
  • 800 ml vegetable broth
  • 2 tsp apple cider vinegar
  • 2 tsp sweet paprika powder
  • Salt
  • black pepper

Instructions

    Wash, trim and roughly chop the bell peppers. Peel and finely dice the onion.

    Heat oil in a pan. Sauté the onion over medium heat until translucent. Peel and crush the garlic, then add it to the pan.

    Add the pepper pieces, pour in vegetable broth and vinegar, and simmer over low heat for about 30 minutes.

    Season the soup with paprika powder, salt, and pepper. Blend until smooth.
