Vegan Mango Lassi with Pineapple Skewers

- 0.25 fresh pineapple
- 1 stalk mint
- 2 tbsp sugar
- 2 mangos
- 1 tbsp sugar
- 2 tbsp lemon juice
- 600 ml soy drink (soy milk) (vanilla flavor)

For the skewers, peel the pineapple and cut out the tough core. Slice each quarter lengthwise into very thin slices and thread them onto wooden skewers in a wavy pattern. Rinse the mint, pat dry, pluck the leaves and finely chop. Mix with sugar, sprinkle over the pineapple and let sit.

Meanwhile, for the lassi, peel the mangos and cut the flesh away from the pit. Place the rough pieces into a blender. Blend with sugar to taste and lemon juice until smooth. Add the soy milk (and optionally a little cold water) and blend until frothy.

Pour the lassi into glasses or bottles and serve with the pineapple satay skewers.
