Vegan Gingerbread Men
Spoonsparrow Vegan gingerbread men: the cute figures taste good for small and big gourmands and are a true eye treat!
Ingredients
- 100 g margarine
- 125 g beetroot syrup
- 50 g raw cane sugar
- 350 g flour (+ 1 tbsp for working)
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 0.25 tsp ground cardamom
- 2 pinch ground allspice
- 1 pinch ground cloves
- 0.25 tsp Salt
- 0.75 tsp baking soda
- 50 ml soy drink (soy milk)
- 125 g powdered sugar from raw cane sugar
- 2 tbsp lemon juice
- 2 tbsp sugar pearls

Add margarine, beetroot syrup and sugar to a pot and heat while stirring until the sugar dissolves. Remove from heat and let cool slightly. Mix flour, spices, salt and baking soda; add soy drink to the margarine-sugar mixture. Knead everything into a smooth dough and cover for 3 hours in the refrigerator.

Line a baking sheet with parchment paper. Roll out the dough on a floured surface and cut out figures. Decorate the remaining dough as desired, shaping clothes, jewelry and hair. Chill the decorated figures for about 20 minutes.

Bake the vegan gingerbread men in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 15 minutes. Remove and cool on a wire rack.
