Gesunde Vanillekipferl
Healthy vanilla crescents: without refined sugar and white flour. With Spoonsparrow you can easily bake healthy Christmas cookies!
Ingredients
- 2 Vanilla Beans
- 280 g wheat flour type 1050
- 100 g Ground Almonds
- 150 g raw cane sugar
- 240 g cold butter
Instructions

Split vanilla beans lengthwise and scrape out the seeds. Quickly knead 260 g flour with almonds, 50 g raw cane sugar, butter in small pieces, and vanilla seeds on a work surface into a smooth dough.

Divide dough into 4 portions and roll each into cylinders (2–3 cm diameter) on a floured surface. Wrap in plastic wrap and chill for at least 1 hour.

Line baking trays with parchment paper. Cut rolls into about 1 cm thick slices, shape into half-moons, and place on the tray. Bake in preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 12 minutes.

Remove healthy vanilla crescents from the tray and while still warm toss them in remaining raw cane sugar. Let cool.
