Spoonsparrow presents: gingerbread squares with icing and currant jam. The spicy Christmas treat is great for gifting!

Ingredients

  • 200 g honey
  • 50 g butter
  • 100 g cane sugar
  • 1 egg
  • 500 g flour
  • 2 tbsp cocoa powder
  • 0.5 tsp cinnamon powder
  • 0.5 tsp clove powder
  • 1 pinch nutmeg flower
  • 1 pinch ground star anise
  • 0.5 tsp cardamom powder
  • 2 tsp Baking soda
  • 3 tbsp rose water (pharmacy)
  • 300 g currant jam
  • 250 g powdered sugar
  • 3 tbsp Lemon juice
  • almond flakes

Instructions

    Warm the honey with butter and sugar while stirring until the sugar dissolves. Let it cool slightly then whisk in the egg. Mix flour, cocoa, and spices together and gradually knead into the honey mixture.

    Dissolve the baking soda in rose water and incorporate. Shape the dough into a ball, wrap in cling film, and chill for about 1 hour.

    Preheat the oven to 180°C (350°F) with top and bottom heat. Line a baking sheet with parchment paper.

    Roll the dough into a rectangle, place on the sheet, and bake for about 20 minutes until golden brown. Let cool.

    Cut the first dough layer horizontally in half, spread jam on one side, place the second layer on top, press lightly. Cut into squares of about 3.5 cm length.

    Whisk powdered sugar with lemon juice to a thick glaze, pour over the squares. Sprinkle with almond flakes and let dry on a cooling rack.
