Vegan Fried Rice

Spoonsparrow’s vegan fried rice delivers a burst of vitality and flavor even on a tight budget.

Ingredients

  • 150 g small brown lentils
  • 300 g parboiled rice
  • Salt
  • 1 tbsp curry powder
  • 2 onions
  • 200 g baby spinach
  • 4 tbsp peanut oil
  • 1 tsp ground cardamom
  • Pepper

Instructions

    Cook the lentils in twice the amount of boiling water for 20–25 minutes. Cook the rice in 2½ times the amount of salted water with curry powder according to package instructions for 16–18 minutes. Drain both and let them dry well.

    Peel, halve, and slice the onions into strips. Wash and pat the spinach dry.

    Heat 2 tbsp oil in a pan. Fry the onion strips for 5–7 minutes over medium heat until golden brown; remove and set aside.

    Add the remaining oil to the pan. Add cardamom, rice, and lentils, stirring frequently, and fry for about 5 minutes over high heat. Mix in the spinach and cook for another 4–5 minutes. Season the vegan fried rice with salt and pepper, sprinkle with the roasted onions, and serve immediately.
