Vegan Bread Loaf

A vegan yeast loaf from Spoonsparrow – so fluffy and tasty that you simply cannot resist it!

Ingredients

  • 500 g spelt flour
  • 0.5 cube yeast (42 g)
  • 270 ml almond drink (almond milk)
  • 100 g whole cane sugar
  • 90 g liquid margarine
  • 0.5 tsp Salt
  • flour for working
  • 2 tbsp coarse sugar

Instructions

    Pour flour into a bowl and make a well in the center. Crumble the yeast into it. Add lukewarm almond drink, 1 tbsp whole cane sugar, and a little flour; mix. Cover and let the starter rise for about 20 minutes.

    Melt margarine over low heat in a pot and cool. Combine with the starter, eggs, salt, and remaining whole cane sugar; knead into a smooth dough. Cover and let rise until doubled in volume (about 40 minutes).

    Knead the dough again, divide into thirds, and shape each into strands. Stack them in the middle and braid to both ends. Fold the ends down and press firmly. Place on parchment-lined tray and cover; let rest for about 30 minutes.

    Preheat oven to 180°C (fan 160°C; gas: level 2-3) after 20 minutes of resting.

    Brush loaf with water, sprinkle coarse sugar, and bake in preheated oven for about 30–35 minutes until golden brown or a skewer comes out clean.
