Vegan Banana Bread
Vegan banana bread from Adaeze Wolf comes without added sugar – the recipe is available here at Spoonsparrow.
Ingredients
- 4–5 ripe bananas
- 50 g hazelnuts
- 50 g walnuts
- 2 tbsp ground almonds
- 1 tsp Naturally Good Rise & Shine spice
- 100 ml Plant drink (Plant milk)
- 250 g buckwheat flour
- 0.5 tsp Weinstein baking powder
- 100 g cranberries (or berries)
- 1 tsp neutral vegetable oil

Preheat the oven to 180 °C (convection 160 °C; gas: level 2–3). Peel and mash the bananas with a fork. Roast the hazelnuts in the oven for about 10 minutes, then rub off the skins with a towel and roughly chop them. Roughly chop the walnuts as well.

Beat the bananas, Rise & Shine spice, and plant drink together in a large bowl using an electric mixer. Add the flour, baking powder, almonds, walnuts, and half of the hazelnuts, mixing until combined.

Place the cranberries or berries in a saucepan and simmer gently until they break down. Let them cool slightly before carefully folding them into the batter.

Pour the batter into a greased loaf pan and add the remaining hazelnuts on top. Bake in the preheated oven at 180 °C (convection 160 °C; gas: level 2–3) for about 50–60 minutes until golden brown.
