Ham and Cheese Quesadillas

Ingredients
- 2 Tomatoes
- 5 spring onions
- 2 mushrooms
- 100 g cheddar (1 piece)
- 0.5 bunch Parsley (10 g)
- 8 tortilla sheets
- 8 slices cooked ham (160 g each)
- 2 tbsp sunflower oil (30 g)
Instructions

Wash and trim the tomatoes, then slice them thinly. Trim the spring onions and cut into thin rings.

Clean the mushrooms and slice them thinly. Grate the cheese. Wash the parsley, pat dry, remove leaves from stems and chop.

Sprinkle half of the cheddar over 4 tortilla sheets. Top with ham, tomatoes, mushrooms, and spring onions, then sprinkle with parsley. Add the remaining cheese, cover with the other tortillas, and press lightly together.

Cook the quesadillas in two pans one after another. Add 1 tsp oil to each pan and heat the quesadillas over medium heat for 4 minutes on each side. Serve the ham and cheese quesadillas cut into quarters.
